Lighten up this fall with these quick main meals! Slow food fast. Healthy Meal Planning: Eating healthy while on the run to the cabin or the football game or where ever your busy life tempts you to pull in and pick up (also saving gas and cutting down on carbon emissions as you're waiting your turn to drive up :-
All menu items will be left fresh for you, except as noted, to eat on all week (after that, you'll want to freeze them). Service is for 4 to 8 portions each. Gift Certificates: If you choose to give this service as a gift to a new Mom, a bedraggled “working all summer just to try to earn a dollar” college student, or a valued client (or whomever), gift certificates make welcome gifts and are available. Please call for details.
The kitchen table service includes one choice from the Garden and one choice from the Feasts.
Choose One Of the Following Garden Fresh Salads (sortof - it IS winter, you know):
A whole buncha Green! All serve 6-8
Choose One of the Following:
- Chipotle and Cabbage Salad (cool salad with a little kick of smoked jalapeno pepper)
- Creole-Marinated Vegetables (broccoli, carrots mushrooms artichokes red onion and cherry tomato splashed with a Creole mustard vinaigrette)
- Marinated Blue Cheese Cabbage Salad
- Pear Salad with Tamari Pecans and Blue Cheese
- Western Waldorf: Apples, red grapes and fennel in a Dijon Dressing
- House Salad Bar: lettuce, sprouts, tomato, cucumber and carrots with Dressing that Biscuit makes all by herself:
- Sesame Soy Vinaigrette
- Honey Walnut Dressing
- Basil Vinaigrette
- Blue Cheese Dressing
- All American French
- Aunt Edna's Garlic Italian
- House Vinaigrette (my whimsy at the time)

Vegetarian:
- Stuffed Zucchini filled with cheese, potatoes and chilis
- Red Bean Gumbo with Greens
- Cajun Style Chipotle Jambolaya
- French Zucchini Tart on a Hazelnut Thyme Crust:zucchini and mascarpone cheese custard in a beautiful herbed hazelnut shortbread crust
- Butternut Squash and Hazelnut Lasagna
- Roasted Eggplant and Zucchini Lasagna
- Mushroom, Spinach and Artichoke Lasagna
- Baked Manicotti Puttanesca: manicotti filled with creamy cheese and topped with a slightly spicy olive, red pepper and garlic tomato sauce
Biscuits Fabulous Fakes (these are when you might not be ready to make the scary leap into tofu):
- Beef-ish Rice Casserole: American Chop Suey without the "chop", faux beef with celery, onion, rice and tomatoes
- Puff Pastry Pot Pies: all the good stuff; carrots, celery, edamame (what?) onion and seitan (again...whaaat?) with a cute puff pastry cap
- California Zucchini Bake, Dude!: zucchini, onion, rice, cheese and veggie burgers
- No Sheep Here! Pie: beef-ish crumbles flavored with Uncle Frankie's Black Dog Ale, peas, carrots and topped with taters!
Fish:
- Crab Imperial: Crab and white fish casserole
- New England Fish Chowder Casserole: Just like the chowder, only in a thick rich casserole that can be frozen.
- Soy Glazed Salmon with Shiitake Mushrooms and Bok Choy
- Salmon and Leek Pot Pie topped with Puff Pastry
Pork:
- Baked Ziti with Crumbled Italian Sausage
- Baked Ravioli
- Polenta Lasagna with Sauteed Bell Peppers and Sausage
For Your Slow Cooker:
- Braised Pork Loin with Sweet Potatoes, Orange and Cilantro
- Country Style Pork with Beans and Sausage
- Three Sisters Stew: rich stew of beans, corn and squash PLUS chorizo sausage, zucchini, beer chilis and spices
Beef:
- Traditional Lasagna
- American Chop Suey Casserole: a tomato-ey family favorite rich with macaroni, ground beef, onions, celery, red and green peppers
For Your Slow Cooker:
- Country Style Pot Roast with Gravy (With recipe for Beef Barley Soup with Mushrooms for leftovers!)
- Southwestern Pot Roast (with recipe for Beef tortilla casserole for left overs!)

1 gallon of fresh market mixed greens and yellow, red, white, orange vegetables. A rainbow of whatever is fresh and local. I'm taking full advantage of the Minnesota growing season! A cup full of these beauties steamed with a seasoning blend and you've got the start of an awesome meal. Pair it with a Sunday Dinner. I'll include a couple of super simple recipes to try. I LOVE this in my refrigerator!
With the following a la carte items salads are additional.

Any of these items can be wrapped and ready “to go” to beach or cabin! All sandwiches come with locally baked, artisan sandwich rolls, a bag of homemade chips, “special chef sauce” and whatever two items you'd like to add to your sandwich; Cheese, tomato, lettuce, onion or pickle.
Pick one of the following to await you in your refrigerator.
Chick-n-Chef: 4 tender, golden, southern fried chicken breasts perfectly seasoned.
CF Beth Burger: 4 herb seasoned turkey burgers already cooked or left prepared and ready for you to grill.
Lean Green: 4 Fresh, juicy Garden patties ready for you to prepare as you like. Note: These lean, green gems aren't made for fooling meat-eaters. They taste like the proud grains and herbs they are made with.
Burger-Burger: 4 fresh beef quarter pounders ready for you to prepare as you like.
Uncle Frank: Authentic Italian cold cut tray of 1 pound of assorted meats and 1 pound of cheeses. This will keep you going for awhile
sunday dinner
Where I'm from, Sunday dinner is served after church and usually with a jiggly gelatin salad of some sort. For you, I'll leave a four to six portion hot dish or roast that will leave plenty for “plan over” meals (left overs) during the week. Any of these items can be wrapped and ready “to go” to beach or cabin, just add your cooler!
Pick one of the following to await you in your refrigerator.
Roast Chicken and either roasted potatoes or root vegetables(3 different choices):
- Greek Style with potatoes, lemon garlic and herbs serves 4-6
- With savory, toasted pecan stuffing serves 4-6
- Amish Roast Chicken with Tarragon serves 4-6
Pot Roast of Beef (3 different choices) beef cooked in beer just tastes wonderful:
- With Porcini mushrooms and locally brewed Pale Ale serves 6-8
- Pumpernickle Roast with Bavarian sauerkraut, caraway seeds, and a locally brewed dark beer serves 6-8
- Italian style with tomatoes, herbs, and red wine serves 6-8
market salads
A light, complete meal, perfect to take to work the next day! Pretty and flavorful, these salads can be the center stage or an elegant side. Any of these items can be wrapped and ready “to go” to beach or cabin! All serve 4-8
Paella Salad with turkey kielbasa, shrimp and orzo pasta in a lemon-garlic sauce
Thai Beef Salad with marinate flank steak and curly oriental noodles in a lime-ginger vinaigrette
Chicken Nicoise Salad with chicken, potatoes and Kalamata olives in a lemony vinaigrette
Tarragon Chicken Salad that can be served as a salad or a sandwich
Sesame Noodles with fresh seasonal vegetables. This is my favorite pot luck offering and there's NEVER anything left over in that dish!!
Pizza Pies
The only frozen item on the kitchen table menu. We feel deprived if we don't have at least 2 of these freshly made beauties in our freezer at any time so I'm always making them. This is a fresh dough crust that is brilliantly crispy if baked on your screaming hot stone in the oven. These are also pretty good just slid onto your oven rack and baked.
4, 12” Naked Pizzas with with fresh tomato sauce and cheese. Have a bunch of different toppings on hand and throw your own pizza party!
THE INVESTMENT
Payment for service is due upon menu selection and initial consultation. Payment for groceries will be due on the cook date. You get to keep the un-used portion of the groceries! I'll track your pantry and try to re-use items as they come up.
- Includes initial consultation, menu planning, grocery shopping, packaging and kitchen clean up
- Groceries, an additional investment, usually 50 or less.
- Packaging also additional, one time and an occasional expense, usually 10-15. If I use your containers - MUCH less!
